How do I achieve this course?

To achieve the Level 2 Diploma Professional Cookery, learners must achieve a total of 68 credits.

What will I be doing?

Over one year you will cover the following subject areas:

  • Investigate the catering & hospitality industry
  • Food safety in catering
  • Health and safety in catering and hospitality
  • Healthier food and special diets
  • Catering operations, costs and menu plan
  • Applying workplace skills
  • Prepare and cook stocks, soups and sauces
  • Prepare and cook fruit and vegetables
  • Prepare and cook meat and offal
  • Prepare and cook poultry
  • Prepare and cook fish and shellfish
  • Prepare and cook rice, pasta grains & egg dishes
  • Produce hot and cold desserts and puddings
  • Produce biscuit, cake and sponge products
  • Produce fermented dough and products

Level 2 Diploma Professional Cookery

Functional Skills
Through your studies you will be given the opportunity to improve and receive certification of your Functional Skills in Communication, Application of Number and Information Technology. In many cases you will also be able to achieve further qualifications in Problem Solving, Improve Own Learning and Performance as well as Working with Others. All key skills are nationally recognised qualifications to improve not only your employability skills but also assist your university application by attracting additional UCAS points.

What will it cost?
All costs will be discussed at interview. Students under 19 do not pay tuition or exam fees.
